Restaurants Worldwide Offer 'Pay What You Can' Day

On August 26, 2026, more than 100 restaurants across the globe participated in a "Pay What You Can" initiative, a day dedicated to hospitality where diners are invited to pay any amount they wish for their meals, including tipping, or even offering goods and services in trade. This event, which saw participation from restaurants in countries such as Mexico, the United States, Colombia, France, India, Nigeria, and Turkey, aims to foster trust, enhance access to dining, and build community within restaurant spaces. Drinks at participating establishments typically remained at their standard price.

The "Pay What You Can" concept was pioneered by Saqib Keval and Norma Listman, the co-owners and chefs of Masala y Maíz, a restaurant based in Mexico City. They have been hosting their own "Paga Lo Que Puedas" (Pay What You Can) days for over eight years. In the previous year, they expanded this initiative by inviting other restaurants to join, attracting more than 20 participants, including three establishments that hold Michelin stars. This year's expansion into a global day of hospitality signifies a growing movement focused on these principles.

The playbook is designed to equip participating restaurants with the necessary tools to successfully implement the "Pay What You Can" model.

Among the notable U.S. restaurants that took part in this year's "Pay What You Can" day were Bombera in Oakland, California; Tokyo Record Bar and Hellbender in New York; Oyster Oyster in Washington, D.C.; Mera Kitchen Collective in Baltimore; Comadre Panadería and Lenoir in Austin, Texas; Ayu Bakehouse in New Orleans, Louisiana; and 22 Moons Tea Room in Valrico, Florida.
