New Grand Cayman Hotel ONE|GT Features Rooftop Dining

The new ONE|GT hotel, Grand Cayman's tallest building at 144 feet, opened this week in George Town, featuring a rooftop restaurant named Byū. This establishment aims to encapsulate the island's layered culinary identity, drawing inspiration from its rich marine life and historical influences from over 130 nationalities residing in George Town. The menu at Byū incorporates elements such as Jamaican jerk seasoning, Japanese tataki techniques, Caribbean escovitch pickles, and locally sourced fish, presenting a fusion of global flavors with a Caymanian essence.

The island's cuisine has historically been shaped by its abundant surrounding waters, providing a foundation of conch, snapper, wahoo, and spiny lobster. Over centuries, immigration has introduced diverse culinary traditions, transforming George Town into a dynamic dining hub within the Caribbean. This evolution has been highlighted by events like the Cayman Cookout, an annual gathering on Seven Mile Beach that has attracted renowned chefs such as Eric Ripert, José Andrés, and the late Anthony Bourdain, solidifying the island's reputation as a significant culinary destination.

ONE|GT, located on Goring Avenue, distinguishes itself from typical beachside resorts by its urban setting in the capital's core. The hotel's interior design reflects the island's maritime heritage through the use of organic textures, custom furnishings, woven seagrass elements, and the display of local artwork. These design choices create spaces that evoke the sea and have contributed to ONE|GT becoming the first property in the Cayman Islands to be included in the Small Luxury Hotels of the World collection.
